How to make tender coconut cake?
Add one cup of maida and 1 tsp baking powder into a strainer and stir well. And mix it using fork or spoon. Then take a bowl and add 4 eggs and 1 tsp vanilla extract and beat it well. After few seconds add 1 cup of powdered sugar and beat it about 8 to 10 min until the egg mixture turns to fluffy. Then add 2 tbsp sunflower oil and mix the batter well. Then add the dry ingredients slowly to the batter and stir well with spatula,spoon or fork .Add ¼ ml of milk alternately into the batter and mix it . Then pour the batter into the cake mould. Bake it on the pre heated pan. And bake it around 35 to 40 minutes.
Then take thick mixture of the tender coconut pulp and condensed milk (1 tender coconut and ¼ cup. condensed milk) and make it frozen. Then take the batter ,make it half and add the sugar syrup (½ cup water,¼ cup sugar and tender coconut water) each layer and decorate as choice.
